What’s for Dinner: Week of March 23, 2014

Welcome to Spring!  I’m so excited that winter is officially over, even though I’m sure another snow storm will be here in a few days.  It’s great hearing the birds chirping each morning…we’re almost there!

Since it’s Sunday, I’m sharing my meal planning for the week, along with Jill Conyers and Mommy Run Fast.

Last Week Recap:

As usual, things didn’t go to plan this past week.  And I still struggle with being okay with that!  We didn’t do as much cooking as I would have liked, but I did my best to eat well.

Chicken Tikka Masala

I was supposed to make the chicken tikka masala on Tuesday night, but silly me…I forgot to read the entire recipe and didn’t realize it was supposed to be made in the slow cooker.  So I made it on Wednesday instead.

Everything was going really well…or so I thought.  I had every ingredient except the coconut flour.  I didn’t think it would be a big deal, but once everything was finished cooking, the lack of coconut flour made the marinade too thin.  And while everything smelled delicious, the flavor wasn’t as powerful as I thought it would be once I tasted it.  I knew I failed on this one when Bret didn’t get seconds.  Maybe I needed to give the chicken more time to slow cook?  I’d try this one again, but next time I have to have the coconut flour handy!

A few weeks ago, I won a Cookbook Giveaway from Jeanette at Fit Girl Travels!  I just received it in the mail a few days ago, and was so excited to see the beautiful package with my name on it!

Now that I (finally) have groceries, I’m so excited to try one of the sweet or savory dishes in this cookbook featuring meals from the Miraval Restaurant.  I’ve scanned through the book, and it’s got some great information.  As a newbie in the kitchen, the list of recommended supplies and pantry items for the kitchen is so clutch!  For example, I don’t have a mandolin or much of anything for baking…but now i can start my wish list!

Besides chicken, I don’t have any of the major meats needed for the recipes in the book, so I won’t be trying out anything from the book this week.  But there’s always next week!

Dinners for the Week:

Sunday 3/23:  Take out from a local pizzeria.  We’ve been striking out on dinners out lately, hopefully we’ll be satisfied!

Monday 3/24: Whole wheat spaghetti with pesto sauce and chicken

Tuesday 3/25: Ground Turkey Casserole with Spinach Salad

Wednesday 3/26:  Pork Chops with brown rice and mixed vegetables

Thursday 3/27:  Leftovers

Friday 3/28:  Tilapia with asparagus and roasted potatoes.

Saturday 3/29:  Most likely out to eat…but I’ll try to keep an open mind!
