I hope your weekend has been enjoyable. Finally, it looks like spring is almost here, thank goodness for 50-degree weather! Since it’s Sunday, it’s time to link up for Meal Planning Sunday!
Last week was not good. I didn’t meal plan and whenever I don’t, things fall apart pretty easily! It also didn’t help that Wegmans had virtually no produce on Saturday, thanks to people stocking up for our last winter storm!
But one of the few highlights was that I was able to once again make Chicken Ropa Vieja. Unfortunately, I wasn’t able to get that amazing flavor that I did last time…but it’ll suffice for lunch later this week.
In addition to that, Bret and I spent this past weekend in Baltimore for our good friends’ wedding! It was so beautiful! On Friday, we had a great dinner at Langermann’s with my sister. The rest of the weekend was dominated by Indian food, more than I’ve ever had in my life! From the breakfast, lunch, cocktail hour and dinner, everything was delicious! It may not have been the healthiest cuisine, but there was no way I was going to hold back!
Sunday 3/9: Finally going to cook my pork tenderloins, using this recipe from a fellow blogger, Detours in Life. I’ll also add brown rice and a spinach salad on the side.
Monday 3/10: BBQ Chicken with spinach salad.
Tuesday 3/11: Leftovers.
Wednesday 3/12: Chicken Stir Fry with spinach salad.
Thursday 3/13: Tentatively, dinner with our newlywed friends. If not, I may whip something else up.

Saturday 3/15: We’ll be watching some March Madness at a local bar, so I think I’ll be suffering bar food for the evening…
