Happy Sunday! The weekend is almost over, sad to say. But the good news is that it’s time to meal plan for the week with the What’s For Dinner Link Up hosted by Jill Conyers and Mommy Run Fast.
I kept the dinner plans this past week VERY flexible. My sister was in town for a conference, and we had kickball after work so I knew I wouldn’t have a lot of time in the kitchen.
Bret, my sister and I went to White Dog Cafe for a special beer dinner featuring Sly Fox! There was a LOT of confusion along the way, but then everything worked out and we had a great time!
For some reason not only did they accidentally lose my reservation, but they seated me in the non-beer dinner section! Woops! We didn’t miss much when we finally got seated in a big booth.
We had four courses that were each paired with a Sly Fox Beer. The manager of the restaurant and a representative from Sly Fox gave a short description of each item we had on the menu. We had a really nice time. My favorite beers were the Saison Vos and the Instigator Doppelbock. And I enjoyed everything on the dinner menu! Restaurants that are locally sourced are always my favorite. Thanks to Jennifer for taking the super artistic photos!

I’m really excited that I’ve signed up for the 30 Day Smoothie Challenge at Simple Green Smoothies, which just started up this month. I know that there is NO way I’m going to be consistent enough to eat a smoothie every single day, but I’m really excited about giving it a go!
I’ve been pretty nervous about making green smoothies with my basic Osterizer blender, and I was getting close to spending a couple several hundred bucks on a Vitamix…but let’s hold off and see how this works!
It was recommended to start with the Beginner’s Luck Green Smoothie, so here we go!

I was really surprised at how easily the spinach blended. That was no problem. Then I had to figure out how the heck to cut a mango! But everything worked out really well. Frozen pineapples are awesome, and keep the smoothie cold! While there are some mango chunks that I can taste, I’m really happy with my first green smoothie!
Now I just need to buy some nice containers to keep the smoothies so that I can take them to work! I tried one of my buddy’s green smoothies at work last week and it really gave me a lot of energy. I’m so excited that I’m finally taking the plunge into the green smoothie world!
Sunday 4/6: Healthy Grilled Chicken Spinach Stack from Live, Run, Sparkle. I just have to try it! Maybe I’ll make Brussels sprouts on the side as well.
Monday 4/7: Grilled chicken and pasta with vegetables.
Tuesday 4/8: Turkey meatballs with whole wheat spaghetti and spinach side salad.
Wednesday 4/9: Barbecue chicken with spinach salad.
Thursday 4/10: Pork chops with brown rice and mixed vegetables.
Friday 4/11: Tilapia, potatoes, and mixed vegetables.
Saturday 4/12: We’ll be out doing a bar crawl in Conshohocken…so we’ll see what kind of food we’ll be eating then!
