What I Ate Wednesday: Green Smoothie Love and an Amazing Kale Burger!

It has been FAR too long since I’ve been able to participate in What I Ate Wednesday, and this week I absolutely could NOT resist!  Be sure to check out Peas and Crayons for all the amazing meals and recipes from other bloggers!

Green Smoothies Galore

As I mentioned a few days ago, I’ve signed up for the 30 Day Challenge at Simple Green Smoothies.  They email out a grocery list each week, so I used that to pick up tons and tons of fruits and some spinach and kale.  First time purchases include mangoes and pears!

I made the Beginner’s Luck Green Smoothie on Sunday and had the rest for lunch on Monday.  It was really delicious and quite filling!  I also had a PB&J sandwich and carrots and hummus to round out the meal.

On Monday night I made Simple Green Smoothies’ Berry Cherry Jubilee.  The recipe is as follows:

  • 2 cups spinach, fresh
  • 2 cups water
  • 1 cup cherries, pitted
  • 1 cup mixed berries
  • 1 banana

I had some for breakfast and the rest for lunch and all I can say is yum!

I think I did a much better job with the consistency of the smoothie!  The blend of ingredients was so much sweeter than the Beginner’s Luck!  It looks very green in the picture, but there is such a nice blend of the mixed berries, I’m so happy with it!

This is starting to become addictive…soon I’ll start branching out by adding more interesting ingredients such as almonds, coconut water, and kale.  This has been really fun so far and I’m now looking forward to making a smoothie each day!

An Amazing Kale Burger

I am in love!  Last Friday I went to Cedar Point Bar and Kitchen for lunch with Lorraine, one of my mentors at work.  This was no doubt the best lunch we’ve ever had together!  The place had that wonderfully hipster vibe in the somewhat up-and-coming Fishtown area of the city.  I had never heard of Cedar Point but found it through Yelp and loved the menu.

Just out of curiousity I got the kale burger, which I’d never heard of let alone tried before.  Here’s the description:  “house made kale and white bean burger topped with sage aioili, served on brioche”.  Yum!  Lorraine got the root salad:  “roasted root vegetables served with a carrot ginger fritter rosemary vinaigrette”.  We were both VERY happy with our meals!!

I’ll have to learn how to make my own kale burger…there has to be tons of recipes out there!
