My First Farm Share!

And it’s Sunday again!  I seriously cannot believe how quickly the month of Ma is flying.  I need things to seriously slow down!  I’m looking forward to sharing What’s For Dinner with the link up with Jill Conyers and Mommy Run Fast, but first I want to talk about another step I’m taking to eat healthy!

Delaware Valley Farm Share:

I’m so excited because I’ve signed up for the Community Supported Agriculture (CSA)/Farm Share that is offered through my job!  I will be getting a delivery of produce straight from local farms every 2 weeks from mid-May to October.  Last Wednesday I got my first bag of goodies:

  • Spinach
  • Kale
  • Spring Mix Lettuce
  • Dill
  • Gala Apples
  • Sweet Potatoes
  • Mushrooms
  • Dozen of Eggs

I love the concept of supporting local farms and ensuring that we are eating as much fresh, high quality food as possible.  I just had an apple with my breakfast and it tastes better than anything I’ve ever picked up from Wegmans or Shoprite! It’s even better that I can pick up my groceries at work and have payroll deduction take care of everything!  I’m so excited to have sweet potatoes (which I definitely needed), and I look forward to hunting for some tasty, healthy recipes to cook all this great food with!

Last Week Recap:

In a lot of ways last week was a mess.  I only had a cereal bar for dinner on Tuesday because after our 7 pm Kickball game, we played an extra “exhibition” game…then I had a conference at 9 pm that ran til about 10:30.  On Friday, I didn’t make the pasta, and we went to a divey bar in the neighborhood.  While the food was cheap, it was pretty terrible!  Not to mention I had take out food for lunch the entire week including Subway, a cheesesteak, and pizza and wings!  Time to get things back in order!

Cheesy Buffalo Meatloaf Muffins:

Fortunately, there was one major highlight, thanks to this recipe from Attack of the Hungry Monster.  As usual, I had to make some substitutions:  I had no onions, zucchini, or mushroom, and I forgot to add the Parmesan cheese.  I did add some chopped up green and yellow peppers though to make up for it.

I was not convinced that this was not going to work, but it did and it was so good.  I finally got to use my Frank’s Red Hot sauce and the flavor was out of this world, especially with the melted blue cheese crumbles inside!

It really turned out to be a winner!  Bret loved it and I was just so proud of myself.  We both ended up eating 3 muffins a piece so no leftovers for us.   There was so much flavor!  With this successful meal and finally getting groceries, I am inspired to make some great food this week!

What’s for Dinner:

Sunday, May 18:  Crockpot shredded chicken, dill, cauliflower, brown rice and mixed veggies

Monday, May 19:  Chicken and multigrain angel hair pasta with salad

Tuesday, May 20:  Leftover Bean Burgers with Baked Sweet Potato Fries.  Hopefully easy to make on our busy Tuesday nights!

Wednesday, May 21:  Trader Joe’s Orange Chicken with mixed vegetables

Thursday, May 22:  Lasagna (possibly butternut squash lasagna) with Brussels Sprouts (yay for having fresh dill!)

Friday, May 23:  Out to dinner during this holiday weekend!

Saturday, May 24:  Probably out to dinner again, stay tuned!
