May 25

Hello!  I hope you’re enjoying the weekend!  It’s that time again…meal planning for the week!  As always, I’m linking up with Jill Conyers and Mommy Run Fast to share What’s For Dinner!

Last Week Recap:

We had a pretty solid week, but things didn’t go exactly to plan.  Even though I was preparing chicken in the slow cooker, on Sunday we ventured out and went to an awesome spot, Grace Tavern, for the most incredible burgers and blackened green beans!

So that pushed us back a day.  We ended up not having the pasta, and I didn’t get to make those sweet potato fries.  I really wanted to make that lasagna, but since my butternut squash is already cubed, it wouldn’t quite work.   On Friday night and Saturday night we went out for dinner since Bret’s parents are in town.  Everything has been delicious!  While it’s been fun and very filling, I can’t wait to get back in the kitchen and make some fun dishes!

Dinners for the Week:

Sunday 5/25:  Out to eat with the family

Monday 5/26:  Chicken and Brussels sprouts with salad

Tuesday 5/27:  Finally finishing off the Bean Burgers and making those Baked Sweet Potato Fries!

Wednesday 5/28:  Black Bean and Butternut Squash Burritos from Oh She Glows, I’m so excited about this one!

Thursday 5/29:  Penne Pasta with Garden Salad

Friday 5/30:  Flounder, asparagus, carrots and quinoa

Saturday 5/31:  Mandarin Orange Chicken and Vegetables

Do you have a special meal for Memorial Day?  What are you looking forward to eating this week?
