I have to be honest, I have not been eating well lately. We have been spending too much time (and money) going out to eat and I’ve been having the worst cravings for sweets, which I easily give in to. I’ll be seeing my dietitian this week so hopefully she will give me the boost that I need. I haven’t been very inspired in the kitchen either…so I’m hoping things straighten out soon!
I actually decided to follow the recipe on the back of my box of whole wheat penne pasta. I sauteed yellow peppers, onions and garlic and cooked the boneless chicken breast while cooking the pasta. I used Prego creamy vodka sauce and added some seasoning and pesto. It turned out to be absolutely delicious…much better than my basic pasta and tomato sauce!

Bret picked up some salmon when he went to the Italian Market a couple of weeks ago. I’m really not experienced with cooking fish, so I was pretty nervous about this one. But with a little bit of patience I worked it out. I was also trying to get rid of eat as many of the vegetables we still had after our last load of farm share. So we had some asparagus and greens to go with it. A lot of the greens we got are very bitter so I tried to counteract that flavor…it was just okay.

Sunday 6/8: Skinny Sloppy Joe’s with some mixed veggies. I may add some variations to the recipe, not sure yet!
Monday 6/9: Chicken Ropa Vieja (one of my favorite go-to’s).
Tuesday 6/10: Leftovers.
Wednesday 6/11: I really want to make lasagna and utilize the zucchini and summer squash I got free from Whole Foods at the Be Well Philly Boot Camp yesterday. I’m looking at either the garden style or grilled vegetable version.
Thursday 6/12: Leftovers.
Friday 6/13: Dumplings with vegetables
Saturday 6/14: Still undecided…may go out to eat.
