What’s For Dinner: Christmas Week

Happy Sunday!  I’m so glad that this past week went so quickly because now I’m finally on vacation for the holidays!  I’m linking up this week with Jill Conyers and Laura of Mommy Run Fast for What’s for Dinner!

Last Week Recap

I had some high hopes for last week’s meals but overall, everything turned out to be pretty disappointing.  I didn’t make the Chicken Spinach Pasta Bake, nor did I make a homemade pizza.  Then the two meals that I did make will most likely not make it on my list again!

One Pot Zucchini Mushroom Pasta

This was a very simple recipe to make, but for some reason I refused to believe that I needed as many vegetables as described in the ingredients!  So while it was easy to make, I didn’t have nearly enough zucchini and mushrooms.  Then when I made the sauce I realized I didn’t have any Parmesan cheese.  So it all ended up being very bland and disappointing.  I later added tomato sauce to give it more substance, but it just didn’t work out the way I hoped.

Chopped Southwestern Tuna Salad

I was really looking forward to making this since I love tuna and usually love Southwestern flavors.  I followed the recipe to a tee, but my tuna salad tasted less like tuna and more like a pile of corn drowned in mayonnaise.  The salad was so watery that it was really difficult to eat!  I guess I needed to add more tuna and fully dry it out before mixing everything together.  Too bad, because it looked like a great idea for lunch…

Meal Planning for the Week

Sunday 12/21:

  • Lunch: Leftover fiesta pizza (takeout)
  • Dinner:  Cod, leftover spaghetti, and side salad

Monday 12/22:

  • Breakfast:  Cereal and leftover sweet potato hash
  • Lunch:  Hopefully joining Bret at his wonderful work Cafeteria
  • Dinner:  I’ll be up in the air!

Rest of the Week:  Away for the holidays!  So I will really have to take a look at one my options are to ensure that I’m eating up to my usual healthy standards!  As for Christmas dinner,  I have no idea what’s on the menu, as I will be a guest…so it’s going to be interesting!  I can’t wait to share with you my time in Nebraska when I return, but in the meantime I’ve got some great posts this week recapping my year of running, so don’t be a stranger!
