What’s For Dinner: Christmas Week

Happy Sunday!  I’m so glad that this past week went so quickly because now I’m finally on vacation for the holidays!  I’m linking up this week with Jill Conyers and Laura of Mommy Run Fast for What’s for Dinner!

Last Week Recap

I had some high hopes for last week’s meals but overall, everything turned out to be pretty disappointing.  I didn’t make the Chicken Spinach Pasta Bake, nor did I make a homemade pizza.  Then the two meals that I did make will most likely not make it on my list again!

One Pot Zucchini Mushroom Pasta

This was a very simple recipe to make, but for some reason I refused to believe that I needed as many vegetables as described in the ingredients!  So while it was easy to make, I didn’t have nearly enough zucchini and mushrooms.  Then when I made the sauce I realized I didn’t have any Parmesan cheese.  So it all ended up being very bland and disappointing.  I later added tomato sauce to give it more substance, but it just didn’t work out the way I hoped.

My 2015 Race Schedule

Happy Hump Day!  I’m linking up with the fantastic Workout Wednesday hosted by Diatta at Femme Fitale Fit Club and Sheila at The Frugal Exerciser.  Every Wednesday we get together and share our fitness-related posts for the week!

I’ve mentioned a few times how I just can’t believe that the end of 2014 is finally here.  To say the least, it’s been interesting! In the next several posts I’ll be giving a recap of the year, but for right now I want to tell you what I’ve got planned to race on 2015!

2015 Race Schedule

I’ve been very blessed that 2014 has been my comeback year for running.  It was so hard suffering through injury after injury, and I never want to live that life again!  Doing well at the Rock and Roll Half Marathon with Coach Kristy really gave me the confidence that I desperately needed.  So my strategy for 2015 is to continue running and add more long-distance races throughout the year.  Am I ready for the full marathon yet?  I am so tempted, but Bret is right–it’s still too soon.  But in 2016, there will be no excuses!

The theme for 2015 is VARIETY.  I’ve realized as a Philly Runner that I am bored!  Most races in some way incorporate Kelly Drive and/or MLK Drive, and I can only take so much of that. Next year there are a lot of races that will be a first for me, which I think will add to the excitement!  It will also take away the pressure of meeting a certain finishing time.

Workout Recap: Cross Training Shoes

Happy Monday!  Hope you had a great weekend.  If I was in denial about Christmas coming before, it’s really full-blown now!  I am not even close to being ready for the holidays, and I’ve been slowly trying to get in the spirit.  There’s just too much to do!

I’ve mentioned a couple of times the past few weeks that I’ve been experiencing pain in my left shin.  I noticed it while working out in my Core and More class, since we do a lot of jumping around.  Then I realized that the pain was impacting my running and I was having pain in my calves, ankles and feet, which I’m still experiencing.   It didn’t make sense for my Adidas to be the culprit since they were the same model as my last pair, but I still removed my Superfeet Green insoles to ease the pain in my feet.  Plus I’ve increased my stretching and foam rolling.

What’s for Dinner: Week Before Xmas

Good afternoon!  I hope you are enjoying these last few hours of the weekend (sigh…).  It has been SO relaxing for me.   I was able to catch up on a LOT of sleep and go back to my childhood for a few hours by watching episodes of The Simpsons and Batman the Animated Series, haha!  The two-part episode about Two-Face made me cry!  But anyway….

Once again I am linking up with Jill Conyers and Laura of Mommy Run Fast and sharing What’s for Dinner!  I’m so happy to be back on board with meal planning and I plan to keep it up!
