What’s for Dinner: Week Before Xmas

Good afternoon!  I hope you are enjoying these last few hours of the weekend (sigh…).  It has been SO relaxing for me.   I was able to catch up on a LOT of sleep and go back to my childhood for a few hours by watching episodes of The Simpsons and Batman the Animated Series, haha!  The two-part episode about Two-Face made me cry!  But anyway….

Once again I am linking up with Jill Conyers and Laura of Mommy Run Fast and sharing What’s for Dinner!  I’m so happy to be back on board with meal planning and I plan to keep it up!

Last Week Recap:

I’m really happy to say that meal planning for last week went really well!  It really does make my life so much easier.  Since I get up so early in the morning, it’s great to have my breakfast planned and ready to go (especially with those smoothies).  My favorite smoothie last week was the Pina Colada:  coconut milk, pineapple, banana, and some ground flaxseed!

My Triple Bean Veggie Burger from Skinnytaste was a hit once again.  I ended up doing a lot of the prep work the day that I planned to make it, so that did take up some extra time.  But we were able to eat it 3 days this week.

I also loved the Avocado egg salad that I made for lunch.  Now I’m realizing that ripeness matters—the avocado wasn’t quite ready…but it did add some texture to the egg salad and I was able to have a tasty healthy lunch each day!  It’s definitely a keeper!

Meal Planning for the Week:

This week I’m focusing more on eating as many veggies as possible.  We haven’t been the best about eating everything before it goes bad, and with the holidays coming up, I don’t want to leave things to rot…so we’re going to be using as much kale and swiss chard as possible!

I’m also really loving the smoothie life again.  Earlier this year I joined in the 30 day smoothie challenge, and I was pretty good with it for awhile, but quickly fell off.  Now I’m looking back at my old emails and polishing off some good recipes!  I’ll be making them this week for breakfast!

Sunday 12/14:

Monday 12/15:

  • Breakfast:  Green smoothie and cereal
  • Lunch:  Chopped Southwestern Tuna Salad on Wrap
  • Dinner:  Bret’s night

Tuesday 12/16:

  • Breakfast:  Green smoothie and cereal
  • Lunch:  Chopped Southwestern Tuna Salad on Wrap
  • Dinner:  Chicken Spinach Pasta Bake….I don’t have chicken, so I may sub in ground turkey.  Still deciding!

Wednesday 12/17:

  • Breakfast:  Green smoothie and cereal
  • Lunch:  Chopped Southwestern Tuna Salad on Wrap
  • Dinner:  Bret’s night

Thursday 12/18:

  • Breakfast:  Green smoothie and cereal
  • Lunch:  Chopped Southwestern Tuna Salad on Wrap
  • Dinner:  Leftovers

Friday 12/19:

  • Breakfast:  Green smoothie and cereal
  • Lunch:  Should be out and about, may join Bret for lunch
  • Dinner:  Possibly a homemade pizza if I can get everything I need!

Saturday 12/20:

  • Breakfast:  Most likely pancakes or French toast with some fixings
  • Lunch:  Hopefully pizza leftovers
  • Dinner:  We may go out to eat…still deciding!
