Hey! Another week has begun and it’s time to get ready for meal planning for the week! I’m linking up with the What’s For Dinner crew, hosted by Jill Conyers and Laura of Mommy Run Fast. I actually didn’t make everything that I planned to last week, but what I did make turned out pretty great! Cooking is continuing to be a very fun activity, and very relaxing. My sister bought me Rachael Ray cookware for Christmas and this week I was able to finally break it out!
I have regularly been using the recipes in 30 Minute Dinners from Better Homes and Gardens magazine that I was gifted this Christmas. I love it because the recipes are creative, easily to follow, and so far, really tasty! I was especially excited to make this cheesy red pepper pizza! I have made a couple of pizzas using pre-made crust, but never really got the results I wanted.
So this time I actually bought some dough mix. It’s nothing special, just a basic mix from Betty Crocker, but having to add water and actually knead the dough definitely made a difference! As usual, I didn’t have everything required for the recipe (like red pepper flakes but I used some fresh cheese (actually using the Cheese Grater, imagine that!)
I am so happy to have a waffle iron now. Seriously, my life is made! So on Saturday morning I decided to make waffles and a sweet potato hash. I have really fallen in love with sweet potatoes…who knew they were so delicious! I used some zucchini, sweet peppers, red onion, black beans, tomatoes, garlic, and cilantro on top. It turned out so flavorful and fantastic!
Last week I went wild on making smoothies. I was using recipes that I accumulated from taking Simple Green Smoothies‘ 30 day smoothie challenges. We had a ton of fruit so that gave me a lot of options. I made three different recipes for my breakfasts last week:
The Carrot Cake was probably my favorite and the Berry Citrus-Ade was a huge bummer! You can’t even taste the mixed berries, it’s all lemon, so it’s practically inedible! Still, it’s been fun to learn what I like and don’t like! Ginger really enhances the flavor of a smoothie, and banana adds an extra fullness that I enjoy.
