Weekly Meal Plan for 1/17/16

Are you looking forward to the start of a new week?  It seems like January is already flying by!

Every Sunday I share my weekly meal plan, consisting of a healthy and wholesome breakfast, lunch, dinner, and snacks to get through each day.  And each week I share my meals as part of the What’s For Dinner meal planning linkup with Laura from Mommy Run Fast!

I have to admit, this past week is NOT a success story.  Keep reading to find out what happened!

Last Week Recap:

This past week of meal planning was a flop.  I had so much that was supposed to be planned for the week and it all went out of the window.  I didn’t get to create any of the proposed lunches or dinners from last week’s plan.  Instead, we went out a couple of nights for dinner late in the week and my lunches consisted of a lot of leftovers.   I did my best to ensure that they were as clean as possible, so that makes it slightly better?

Why did this happen?  I have to be honest:  I’m starting to get lazy and not make meal planning and prepping a priority.  What good is a meal plan if you don’t get your ingredients together? The hardest thing for me is simply getting started.  Sunday is the day to get things done before another week begins, but I tend to procrastinate on the food-related responsibilities.

What did go well last week was the kickoff of the 21 Day Reset.  For the first 7 days, I didn’t eat any candy or baked goods and limited my added sugar intake pretty well, if I say so myself!  And the strength training, while challenging, is going well too! I just didn’t get to make any of Laura’s meals, which I’m pretty bummed about since there are so any great recipes to try!

But I can’t beat myself up about it.  Now’s the time to take action.  Blogging about my meal planning is mainly for accountability, but I need to do more than just write about it.  I need to snap out of this lazy streak and remember my goals…put in the work to make meal planning a routine!  I’d love to hear any tips that have worked for you!

Meals for the Week:

Breakfasts:

Scrambled eggs and veggies
Protein pancakes
English muffins and peanut butter
Fruit smoothies

Lunches:

Tuna salad wraps with veggies
Green/protein smoothies
Butternut squash soup
Dinner leftovers

Dinners:

Baked tilapia with acorn squash
Butternut squash chili
Slow cooker chicken – still deciding the recipe variation!
Turkey meatballs with whole wheat pasta and veggies

Snacks:

Greek yogurt and granola
Carrots and hummus
Clif bars
Peanut butter oat balls

Now I’m off to the kitchen to start making this stuff!
